Smoked Sembilang with Bird’s Eye Chilli

Ingredients

  • 900g sembilang fish, cut into thick slices

  • 1 turmeric leaf, knotted

  • 1 can MARIGOLD Evaporated Filled Milk

  • 300ml water

  • 1 tbsp chicken seasoning

  • 3 stalks lemongrass, thick ends crushed

  • Salt to taste


Ingredients for pounding:

  • 2cm fresh turmeric

  • 3-5 bird’s eye chillies

  • 1 tsp salt

Method

  1. Combine MARIGOLD Evaporated Filled Milk with water and chicken seasoning in a pot and bring it to a slow boil. Add in pounded ingredients, lemon grass and cook for 3 minutes.

  2. Add in fish and turmeric leaf. Once fish is cooked, turn off heat. Season with salt to taste.

Chef's Tip:

Tenggiri fish or black pomfret would also be suitable for this dish.
