Smoked Sembilang with Bird’s Eye Chilli

Ingredients
900g sembilang fish, cut into thick slices
1 turmeric leaf, knotted
1 can MARIGOLD Evaporated Filled Milk
300ml water
1 tbsp chicken seasoning
3 stalks lemongrass, thick ends crushed
Salt to taste
Ingredients for pounding:
2cm fresh turmeric
3-5 bird’s eye chillies
1 tsp salt

Combine MARIGOLD Evaporated Filled Milk with water and chicken seasoning in a pot and bring it to a slow boil. Add in pounded ingredients, lemon grass and cook for 3 minutes.
Add in fish and turmeric leaf. Once fish is cooked, turn off heat. Season with salt to taste.
Chef's Tip:
Tenggiri fish or black pomfret would also be suitable for this dish.
