Ingredients
1 medium kurau fish head, cut into half
1 small yam, sliced thick
2 cloves garlic, chopped finely
1 thumb-sized old ginger, shredded finely
750ml water
5-6 Chinese red dates
100ml MARIGOLD Evaporated Filled Milk
2 tbsp anchovy granules
Salt and pepper to taste
Garnish:
Coriander leaves, chilies and fried garlic

Deep fry yam slices till lightly brown. Remove and drain out oil.
Heat pan with 1 tbsp oil, sauté garlic and ginger till fragrant. Add in water, MARIGOLD Evaporated Filled Milk, anchovy granules and bring it to a boil. Put in red dates and fried yam to cook until soft.
Lastly, add in fish head, salt and pepper then cook over high heat until fish is done. Garnish with coriander, chilies and fried garlic.
To get rid of fishy smell, marinate fish with some salt and lemon juice, leave for 10 minutes then wash it off and drain.
