Prawn Sambal with Tapioca

Ingredients

Blended ingredients:

  • 100g dried prawns, washed

  • 8 shallots

  • 3 garlic

  • 3 stalks lemon grass

  • 2 tbsp chili paste

  • 1 tbsp toasted shrimp paste

  • ½ cup MARIGOLD Evaporated Filled Milk

    (Blend till fine)

  • 2 tbsp sugar

  • 1 tsp salt

  • 3 kaffir lime leaves, shredded finely

Method

  1. Heat 6 tbsp oil and pan-fry blended ingredients over medium/slow fire until the moisture in mixture dries up (takes around ½ hour). Add in kaffir lime leaves and season with sugar and salt.

  2. In the meantime, steam tapioca until cooked (it will look transparent).

  3. Serve tapioca with prawn sambal.

Chef's Tip:

Prawn sambal is also good to be used as sandwich filling.
