Prawn Sambal with Tapioca

Ingredients
Blended ingredients:
100g dried prawns, washed
8 shallots
3 garlic
3 stalks lemon grass
2 tbsp chili paste
1 tbsp toasted shrimp paste
½ cup MARIGOLD Evaporated Filled Milk
(Blend till fine)
2 tbsp sugar
1 tsp salt
3 kaffir lime leaves, shredded finely

Heat 6 tbsp oil and pan-fry blended ingredients over medium/slow fire until the moisture in mixture dries up (takes around ½ hour). Add in kaffir lime leaves and season with sugar and salt.
In the meantime, steam tapioca until cooked (it will look transparent).
Serve tapioca with prawn sambal.
Chef's Tip:
Prawn sambal is also good to be used as sandwich filling.
