Masala Chicken with Pineapple

Ingredients

  • 1 cinnamon stick

  • 2 star anise

  • 1 onion, sliced

  • 2 green chilies, cut into half horizontally

  • 400g chicken fillet

  • 2 tbsp garam masala

  • 1 tbsp meat curry powder

  • ¼ piece pineapple, sliced

  • ½ cup MARIGOLD Evaporated Filled Milk

  • Coriander leaves, chopped

  • Salt to taste


Ingredients for blending:

  • 5 cloves garlic

  • 3cm ginger

    (Blend into a fine paste)

Method

  1. Heat pan with 4 tbsp oil and when hot, put in cinnamon stick, star anise, onion, green chilies and fry for 2 minutes. Add in blended paste and fry until fragrant.

  2. Add in chicken, garam masala, meat curry powder and cook for 2 minutes, stirring. Add in MARIGOLD Evaporated Filled Milk, cover pot with lid and reduce heat.

  3. Once chicken is cooked, add in pineapple and chopped coriander. Season with salt to taste.

Chef's Tip:

Adjust spices according to your taste. Be careful not to over fry or burn the masala as it provides the base flavour of this recipe.
