Fluffy egg omelette

Ingredients

  • 6 whole eggs

  • 3 eggs, separate white from yolks

  • 6 tbsp of MARIGOLD Evaporated Filled Milk

  • 1 tbsp chicken seasoning

  • ½ tsp white pepper

  • 1 onion, chopped finely

  • 3 tbsp chopped spring onion

  • 1 red chilli, chopped

  • 5 tbsp of cooking oil

Method

  1. Whisk egg white till thick and foamy. In another bowl, combine whole eggs with egg yolks, MARIGOLD Evaporated Filled Milk, chicken seasoning, pepper, onion, spring onion and red chilli.

  2. Heat 5 tablespoons oil in a heavy base pan till smoking hot. Gently mixed in beaten egg white to the egg mixture and pour it into hot pan. Leave it to cook or firm up partially before turning it over to brown the other side.

  3. Cut eggs into wedges and serve.

Chef's Tip:

To get fluffy omelette, pan must be smoking hot with sufficient oil when egg mixture is poured in. Lower heat after ½ a minute of cooking time.
