Pomegranate Roast Chicken Salad

Ingredients

  • 1 large roast chicken breast, sliced

  • 1 cup pomegranate seeds (South African)

  • 1 cup cherry tomatoes, cut into half

  • ½ cup baby spinach (ready to eat)

  • 1 onion, sliced thinly


Ingredients for salad dressing:

  • 2 tbsp MARIGOLD Sweetened Condensed Filled Milk

  • 4 tbsp MARIGOLD Evaporated Full Cream Milk

  • 1½ tbsp mayonnaise

  • 1 tbsp Smokey Mesquite steak sauce

Method

  1. Combine dressing ingredients and chill in refrigerator.

  2. Just before serving, put chicken with the rest of the ingredients in a salad bowl. Add salad dressing and gently toss until well combined.

Chef's Tip:

To enjoy fresh and crispy salad, mix in dressing just before serving.
