Pineapple and Lime Sorbet

Ingredients

  • 360g granulated sugar

  • 100ml water

  • 1 can MARIGOLD Evaporated Creamer

  • 10 tbsp MARIGOLD Sweetened Creamer

  • 400ml pineapple juice

  • 10 tbsp concentrated lime juice

  • 1 tbsp lime rind (lime zest)

  • Serve with ice cream waffle cones and sliced limes

Method

  1. Combine water and granulated sugar. Cook over medium heat, stir until sugar dissolves. Leave to cool.

  2. Then combine sugar mixture with the rest of the ingredients except lime rind. Sieve mixture into a loaf pan. Add in lime rind and mix it.

  3. Cover with foil and put mixture into the freezer until almost set.

  4. Remove sorbet into a food processor and pulse mixture till smooth. Return mixture back to the container and refreeze until firm.

  5. Serve sorbet on ice cream waffle cones and decorate with sliced limes.

Chef's Tip:

Avoid scraping out lime rind from white pith as it tastes bitter.
