Milky Jelly Cupcakes

Ingredients
12g agar-agar powder
200ml MARIGOLD Evaporated Creamer
100ml coconut milk
500ml water
200g sugar
2 tsp vanilla, pandan or coconut essence (own preference)
Food coloring of your choice
15 silicone cupcake moulds
Candy moulds with design of your choice

Combine agar-agar powder, MARIGOLD Evaporated Creamer, coconut milk, water and sugar together. Stir mixture until agar-agar is well blended into the liquids.
Bring mixture to a slow boil, stir and cook it for 1 minute or until mixture thickens slightly and just about to boil. Turn off heat.
Spoon plain mixture into 15 silicone cupcake moulds. Divide the remaining mixture into colors of your choice. Spoon it into small candy moulds and leave it to set.
Remove agar-agar from candy moulds and use them to decorate agar-agar cupcakes. They are best to be served chilled.
Always combine agar-agar powder with liquid before cooking to obtain lump-free mixture.
