Coffee Latte Pudding

Ingredients
1 tbsp agar-agar powder
1½ tbsp gelatine powder
750ml water
2 egg whites
½ tsp cream of tartar
Ingredients for mixture:
1 can MARIGOLD Evaporated Full Cream Milk
½ cup water
1 tbsp coffee granules
2 tbsp cappuccino emulsion
250g sugar
3 tbsp custard powder and ¼ cup water (combined)
1 tsp fine salt

Fill pot with water, sprinkle agar-agar and gelatine powder. Slowly mix until dissolved. Bring to a slow boil.
Add in mixture and keep stirring. Strain mixture into a jug.
In the meantime, beat egg whites with cream of tartar until stiff.
Pour hot mixture into the egg white, stirring continuously until well combined.
Set pudding in mould of your choice. Leave to cool and chill in refrigerator.
Always sprinkle agar-agar powder or gelatine on to liquid to dissolve it more effectively.
