Coconut Candy with chocolate Share Print

Ingredients
600gm grated coconut (white only)
500gm granulated sugar
1 can MARIGOLD Evaporated Creamer
½ can MARIGOLD Sweetened Creamer
30gm salted butter
4 tsp vanilla essence
A few drops cochineal
200g dark chocolate, chopped coarsely
4 tbsp MARIGOLD Evaporated Creamer

Put all the ingredients together in a large saucepan and cook over high heat for the first 10 minutes stirring constantly.
Then lower fire when mixture began to thicken and continue to cook over low fire for another ½ hour or until mixture starts to leave sides of pan.
Lightly greased a shallow tray and spread mixture over it. Lightly press down on the mixture. Leave to cool completely before cutting.
Put dark chocolate and MARIGOLD Evaporated Creamer in a double boiler. Stir until smooth.
Dip cut coconut candy slice into chocolate mixture. Leave it to set on wax paper.
If desired white or milk chocolate can be used.
